The Hotel St. Francis Cook Book.  By Victor Hirtzler.  Chicago:  The Hotel Monthly, 1919.  1st ed.  4to.  B/w frontis. portrait of author, 432pp., lists menus for Breakfast/Lunch/Dinner for the entire calendar year, indices, ads at rear.  Forest green linen over heavy bds., gilt ruled with gilt lettering on spine & front cover, corners bumped, covers rubbed, edges rubbed, stamp of El Paso Restaurant Supply on ffe, previous owner's name present, else generally Good.  The author gives recipes in a calm and easy manner e.g., making preserves from seasonal fruit, as well as describing the many methods of preparing crab.  Impressive, with no two day's menus alike.
